Delicious, warming soup.

Tasty zucchini soup

(Makes 6 servings)

 

2 small white onions, thinly sliced

2 to 4 tablespoons butter or margarine

1 large celery rib, scraped, and thinly sliced

1 large carrot, scraped and thinly sliced

3 cups (730mls) chicken broth

3 medium zucchini, unpeeled and cut into quarters lengthwise and thinly sliced

Salt and pepper to taste.

 

 

Method:    Into a heavy, big soup pot melt the butter or margarine and sauté onions, carrot and celery until soft.   Stir in ½ cup broth and the zucchini and cook until zucchini is tender, around 12 minutes.    Put in the broth that is left and simmer slowly until veges are tender but still hold their shape.  Season, to your taste.  Serve hot and sprinkled with cheese if you like to do something different.
