Watermelon
salsa
(Makes 4
servings)
½ cup (80g) diced, seeded
cantaloupe
1 ½ cups (240g) diced, seedless
watermelon
3 scallions (spring onions)
white part and 1 inch (2.5cm) green,
chopped finely
¼ cup (12g) chopped, fresh
mint
2 tablespoons (20g) finely
minced, fresh ginger
1 serrano chilli pepper, seeded
and finely minced
¼ cup (60ml) fresh lime
juice
2 tablespoons (19g) crumbled,
low-fat feta cheese.
Method: Combine
all ingredients into a covered dish,
except feta cheese. Cover
and chill until you are ready to use
it.
When serving, transfer to a decorative
dish and sprinkle feta cheese over
salsa. Nice
with chicken.
