This is a lovely quick-cooking
way to serve your vegetables. Colourful
and tasty.

Vegetable
confetti
(Makes 2
servings)
1 small, yellow squash,
shredded
1 small zucchini,
shredded
2 carrots,
shredded
1 small onion, sliced
thin
2 tablespoons (30 mls)
water
2 teaspoons (10ml)
margarine.
Method:
Mix zucchini, carrots, yellow squash,
onion and water in a fry-pan. Cover
and cook over medium heat for up to 5
minutes or until tender.
Put in the margarine and sauté,
uncovered, until all the moisture has
evaporated. Serve
as soon as confetti is
cooked.
