Salmon or tuna puffs
8 ounces tuna or salmon,
drained
½ cup mushrooms,
sliced
1 cup skim
milk
¼ cup green pepper or pimento,
chopped
Salt and pepper to
taste
2 eggs,
separated.
Method:
Mix fish, mushrooms, skim milk and green
pepper and bake at 375oF (190C) Gas mark
5 until vegetables nearly
cooked.
Beat egg whites and a pinch of salt until
stiff. Beat
egg yolks and then fold in the whites;
just a little at a time. Pour
over the hot mix and put back in the oven
for another 20 minutes.
