This is seriously a sandwich with a difference. A great luchtime dish.

Roast beef sandwich

 

2 tablespoons (30ml) chopped celery

3 ounces cooked, roast beef, cut thin

1/8 teaspoon (.63ml) chopped chives

½ tablespoon (7.5ml) lemon juice

½ medium tomato, chopped

½ teaspoon (2.5ml) salt,  ¼ teaspoons (1.25ml) pepper

1 teaspoon (5ml) diet mayonnaise

2 slices thin bread

Lettuce.

 

Method:   Combine all the ingredients except the lettuce and bread slices. Mix them well and spread over one slice of bread.  Top with lettuce and then pop the other slice on top.

Hot open-faced beef sandwich

 

1 tablespoon (15ml) bouillon liquid

1 pound lean, ground beef (mince)

1 cup chopped, green pepper

1 cup chopped onion

1 cup diet catsup

2 tablespoons (30ml) prepared mustard

Artificial sweetener to equal 1 teaspoon sugar

1 tablespoon (15ml) vinegar

Toasted bread.

 

Method:   Brown beef in the bouillon.  Prepare the vegetable mix and then combine the remaining ingredients.  It is a good idea to do this ahead of time so the seasonings blend well.   Add vege mix to beef mixture.  Turn the heat to low and simmer, covered, for half and hour.  Toast bread on both sides and spoon mix over it.
