Raw vegetable
baskets
Fill several small baskets with
three or four kinds of raw vegetables,
put the same kind together. Decorate them
with sprigs of herbs and perhaps a small
bowl (or hollowed out vege) for the
dip.
Vegetable combination
ideas:
Carrots – cut on the diagonal by giving
the carrot a quarter turn after each cut
Or pierce out strips from the side of the
carrot, lengthwise, which will create a
flower effect when sliced straight
through; red
bell pepper chunks; snow peas with the
top and string removed and blanched in
boiling water for half a minute then
plunged into icy water to halt the
cooking process;
cauliflower florets; cherry tomatoes;
cucumber slices; celery strips, sugar
snap peas and zucchini – sliced on the
diagonal.
