Raspberries and papaya
with
lime
(Makes 6
servings)
1 cup (120g) fresh, washed
raspberries
3 ripe papayas, about 1 pounds
(480g) each, peeled and
seeded
Juice and grated zest of two
small limes
Sugar substitute to
taste.
Method: Cut the
peeled and seeded papayas in half,
long-ways. Cut these
into slices and put them into 6 cold serving
dishes. Portion out
the raspberries between dishes and drizzle with
lime juice. Pop
some lime zest over each one and a small
covering of the sugar
substitute.
Serve immediately.
