Orange nut
cake
1/3 cup sugar twin,
white
¼ cup sugar twin,
brown
1 ¼ cups flour
1 egg
2 teaspoons (10ml) baking
powder
¼ teaspoon (1.25ml)
soda
¼ teaspoon (1.25ml)
cinnamon
2/3 cup orange
juice
1 teaspoon (5ml) orange
extract
1 tablespoons (30ml) chopped
nuts.
Method: Preheat
oven to 350oF (180oC) Gas mark
4.
Grease an 8 inch baking dish.
Into a big bowl mix oleo, egg and sugar
twins and beat for 2 minutes on high
speed. Scrape
the sides of the bowl during
mixing.
Lightly spoon flour into a measuring cup
and level off. Blend
in the remaining ingredients, except the
nuts.
Beat one minute on low speed and then
pour mix into the tin. Pop the
nuts over the top before baking at 350oF
(180oC) Gas mark 4 for up to half an
hour.
