Date Nut Muffins
(Makes 12 large muffins)

1 cup white flour
1 cup whole wheat flour
2 teaspoons (10ml) baking powder
1 teaspoon (5ml) cinnamon
1 1/2 tablespoons  (22ml) oil
½ cup chopped dates,  ½ cup chopped walnuts
1 egg, beaten,     1 cup (240ml) milk
2 tablespoons (30ml) liquid  sweetener.
Method:   Preheat oven to 400oF (200oC) Gas mark 6.   Mix dry ingredients and then add dates and walnuts.  Make a hole in the mix and add egg, oil and milk.  Mix until it is all blended.  Spray muffin tins with oil-spray and put mix 2/3 up the sides.   Bake for up to 25 minutes.
