Oatmeal Apple Aauce Muffins

½ cup skim milk
¾ cup dry quick cook oatmeal
½ cup unsweetened applesauce
2 tablespoons (30ml) oil
¾ cup flour
1 large egg
2 teaspoons each vanilla and cinnamon
1 teaspoon (5ml) ginger
2 teaspoons (10ml) baking powder
½ teaspoon (2.5ml) salt
Substitute equal to 5 teaspoons brown sugar.

Method:   Mix oatmeal, oil, applesauce and milk and then stand for 20 minutes.  In another bowl mix flour, ginger, cinnamon, salt and baking powder.  Add slightly beaten eggs, brown sugar substitute and vanilla to the oatmeal mix.  Put in the dry ingredients and stir to moisten only.  Spray muffin tins with vegetable spray and fill ¾ full.  Bake at 350oF, (180oC) Gas mark 4 for up to 20 minutes.
