Microwave Bran Muffins
(Makes 12 servings)

1 cup buttermilk
1 cup bran
1 banana, mashed
1 egg
¼ cup each of oil and honey
1 cup whole wheat flour
1 teaspoon (5ml) baking soda
Pinch of salt
2 tablespoons (30ml), each of margarine and honey.

Method:   Mix all ingredients, except margarine and honey, together and when ready put mix into microwave muffin pans.  Microwave for three and a half minutes. (Depending on your microwave: high suits most)   Mix margarine and honey and spoon on each muffin; return to microwave and cook for another minute.
