Muffin Recipes
A tasty range of muffin recipes all low enough in
carbohydrates for a diabetic to enjoy.
Dark Bran Muffins
1 teaspoon (5ml) baking soda
1 cup all purpose flour
1 cup 100 percent bran
2 large egg whites, room temperature
1 cup water
Liquid sweetener equal to 3 tablespoons sugar
2 tablespoons (30ml) vegetable oil
¼ cup dark molasses and ¼ cup dry buttermilk
Pinch nutmeg
¼ cup raisins.
Method: Put soda, bran, flour and dry buttermilk
in a mixing bowl and blend on low speed. Combine water,
egg whites, sweetener, oils and molasses and stir with a fork
until mix is moist. Add in nutmeg and
raisins. Grease muffin tins and pour mix half way up the
muffin holes. Bake at 400oF (220oC) Gas mark 7 for up to
25 minutes or until muffins spring back when lightly touched in
the middle.
