Simple Irish
stew
(Makes up to 6
servings)
(Cook the mutton long and slow;
never boil as it ruins the flavour. Eat
with freshly baked Irish Soda
Bread.)
4 large potatoes, 2 large
onions, chopped
2 ½ pounds boned mutton
(lamb)
4 medium carrots, sliced, 1
sprig fresh, parsley
2 cups
(480mls)
Salt and pepper to
taste.
Method: Cut
the meat into medium size chunks and peel
the vegetables and slice thickly, chop the
parsley. Pick
a large pot with a well fitting lid and put
all ingredients into it; be sure to put them
in layers starting and ending with the
potatoes. Pour in
water and seasonings.
Cover and cook on a low heat for around two
and a half hours, until the meat is tender
and the potatoes have thickened the
liquid. If you use
lamb you would only cook for one and a half
hours. It
is also really well presented if you cook it
in the crockpot and leave it overnight on
low: crockpot
mutton, 8 hours or lamb, 5
hours.
