Fruit and spice
cake
2 cups raisins
¼ cup currants
2 cups (480mls)
water
2 cups flour
¾ cup oil
2 eggs
2 tablespoons (30ml) liquid
sweetener
1 ¼ teaspoons
cinnamon
½ teaspoon
nutmeg
Drop of pear
essence
1 teaspoon
soda
1 teaspoon (5ml)
vanilla
1 cup unsweetened
applesauce
2 tablespoons, finely chopped
walnuts.
Method:
Cook the raisins in the water until it is
all absorbed then add applesauce, oil, eggs
and sweetener; mix
thoroughly.
Blend in the baking soda and flour and
add remaining ingredients and make sure
it is well mixed. Pour
into a flat baking tray and bake at 350oF
(180oC) Gas mark 4 for up to 35
minutes.
(If you are watching your cholesterol,
use 3 egg whites instead of the two
eggs!)
