Diabetic jam or jelly
2 envelopes unflavoured
gelatine
Pinch of salt
½ cup lemon
juice
1 tablespoon
arrowroot
2 cup
strawberries
4 cup Equal
sweetener.
Method:
Crush fruit and mix all ingredients together
and bring to the boil, stirring all the
time. Let it
boil for one minute and then take from the
heat. Stir for a
further two minutes. Pour into
sterilized jars and seal. Cool and
store in the refrigerator.
