Dieters, diabetic
cookies
1 teaspoon (5ml)
soda
½ teaspoon (2.5ml) salt or salt
substitute
1 2/3 cup
flour
2 teaspoons (10ml) apple pie
spice
1 cup diet
margarine
6 tablespoons or 6 packs sugar
substitute (like Sweet N
Low)
1 egg
1 teaspoon (5ml)
vanilla
1 cup unsweetened
applesauce
2/3 cup
raisins
1 tablespoon (15ml)
currants
1 cup All Bran
cereal.
Method:
Sift flour, soda, spices and
salt. Beat
the margarine, sugar substitute, egg and
vanilla until blended. The mix
should be rough and crumbly due to the
margarine. Add
applesauce and dry ingredients and mix
thoroughly. Stir in
cereal and fruits. Bake in
a 9 x 13 inch pan, at 375oF (190oC) Gas
mark 5 for around 15 minutes.
Cool and cut into squares. You can
freeze these if you
wish.
