Butterscotch cookies
(Makes 24
servings)
½ teaspoon (2.5ml) baking
powder
1 cup flour
¼ cup
shortening
Dash of salt
2 tablespoons (30ml) brown
sugar
1 envelope or 1 1/6 ounce
artificially sweetened butterscotch
pudding and pie filling
mix
¼ teaspoon (1.25ml)
vanilla
1 egg.
Method:
Sift flour, salt and baking
powder.
Mix shortening, sugar and cream and then
slowly add the pudding mix and make sure
it is well combined.
Add egg; beat until mix is light and
fluffy. Add
vanilla and then all other
ingredients.
Place this dough on wax paper, shape and
roll into a 2 inch diameter.
Wrap in more wax paper. Put
into the refrigerator for around half an
hour; or overnight. Cut
into 1/8 inch thick slices and put on an
un-greased baking tray. Bake at
375oF, (190oC) Gas mark 5 for up to 10
minutes.
