Skillet eggs
¼ cup tomato juice
¼ teaspoon parsley flakes
1/8 teaspoon (.63ml) pepper
2 eggs
¼ teaspoon (1.25ml) salt.
Method: Into a fry-pan or skillet combine all
the ingredients, except eggs. Stir over medium heat
until the mixture boils. Add in the eggs, one at a time
and cook over moderate heat while basting with the tomato
juice. When eggs are set they are ready to serve, usually
around 4 minutes.
