Breakfast Burrito
(Makes 1 serving)

½ tablespoon chopped, canned green chillies, drained
2 tablespoons chopped onion
½ cup egg substitute
1 tablespoon shredded fat-free Monterey Jack cheese
Dash liquid hot pepper sauce (if you want)
1 10 inch 98% fat-free flour tortilla, warmed
Pinch pepper. 

Cooking spray.

 

Method:   Spray a non-stick pan/skillet with cooking spray and cook the chillies and onion over medium heat for 3 minutes, stirring all the time.   Whisk together egg substitute, Tabasco, cheese and pepper.  Pour into the skillet and scramble for up to 4 minutes until the eggs are done to taste but do not let them get dry.   Put the egg mix, along one-third of the tortilla, about 2 inch from the bottom.   Fold up lower edge and roll from the side to form a burrito.   Eat these as soon as they are ready or you can wrap them in a towel or napkin to eat later.
