This is a great one for breakfast, or even for a nice warming snack for later in the day. You can use a sugar substitute according to your taste but I find that the fruit makes it sweet enough. Perhaps try it before you add the sweetner.

Apple  Cinnamon Oatmeal  (3 servings)

 

¼ teaspoon salt

1 ½ cups water

2/3 cups quick cook oatmeal

1 medium apple, peeled and grated

1 teaspoon cinnamon

2 tablespoons raisins

Sugar substitute, to taste

 

Method: 

 

Bring water and salt to the boil in pot. Stir in oatmeal, raisins, cinnamon and apple. Reduce heat and cook for one minute until the water is absorbed. Serve hot with sugar substitute.
